Slow Cooker Pot Roast: A Comfort Food Classic

This classic slow cooker pot roast recipe is the epitome of comfort food. Tender, flavorful meat falls apart easily, while the rich gravy soaks into the accompanying vegetables for a truly satisfying meal.

  • 3-4 pound boneless chuck roast  
  • 1 large onion, chopped
  • 3 carrots, peeled and chopped  
  • 4 medium potatoes, peeled and quartered

  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup beef broth  

Instructions:

  1. Sear the Roast: Heat a large skillet over medium-high heat. Season the roast with salt and pepper. Sear the roast on all sides until browned.
  2. Layer the Slow Cooker: Place the chopped onion in the bottom of the slow cooker. Top with the seared roast. Arrange the carrots and potatoes around the roast.
  3. Add Flavor: In a small bowl, combine the minced garlic, thyme, rosemary, salt, and pepper. Sprinkle the seasoning mixture over the roast and vegetables.
  4. Pour Broth: Pour the beef broth over the ingredients in the slow cooker.  
  5. Cook Low and Slow: Cover and cook on low for 6-8 hours, or on high for 4-6 hours, or until the meat is very tender and easily shreds with a fork.
  6. Serve: Remove the roast from the slow cooker and let it rest for 10 minutes before slicing or shredding. Serve the roast with the vegetables and the delicious gravy from the slow cooker.

Tips & Variations:

  • Add some wine: For extra flavor, add 1 cup of red wine to the slow cooker along with the beef broth.
  • Include root vegetables: Add other root vegetables such as parsnips, turnips, or rutabagas to the pot.
  • Make it heartier: Add a few bay leaves or a sprig of fresh rosemary to the slow cooker.
  • Thicken the gravy: If desired, remove some of the cooking liquid from the slow cooker and whisk in a slurry of cornstarch and water to thicken the gravy.
